
The Rock's French Toast (Rock Toast)

The Rock's French Toast, or Rock Toast, is a decadent take on the classic breakfast favorite featuring thick brioche slices soaked in a rich, flavorful mixture. The dish boasts a delightful peanut butter sauce that elevates every bite, alongside a sprinkle of toasted coconut that adds texture and an exotic touch. It’s perfect for indulgent brunches or as a special treat to start your day off right.
Ingredients
- •2 each eggs
- •250 ml milk
- •0.25 tsp salt
- •75 g brown sugar
- •0.5 tsp cinnamon
- •0.25 tsp vanilla extract
- •2 slices brioche bread (2in/6cm thick, or use 4 thinner slices)
- •unsalted butter (for cooking)
- •6 tbsp peanut butter
- •150 g maple syrup (or other syrup/honey)
- •6 tbsp coconut cream
- •200 ml whipping cream (cold, straight from the fridge)
- •2 tbsp icing sugar
- •1 each vanilla pod (only the seeds, or use 1 tbsp vanilla paste or 1 tsp vanilla extract)
- •toasted coconut flakes (for serving)
Instructions

In a bowl, combine all the ingredients except the bread with a whisk, or use a blender.

Soak the slices of bread for 2 hours on each side, or overnight in the fridge, turning them for 30 minutes to 1 hour to soak both sides.

Preheat a pan over medium heat, add a bit of butter, and add the bread.
