- •3 medium carrots (peeled and cut into chunks)
- •2 medium yellow onions (sliced)
- •4 garlic cloves (minced)
- •2 sprigs fresh rosemary
- •3 sprigs fresh thyme
- •salt and pepper (to taste)
- •2 tablespoons olive oil (for searing the roast, optional)
- •1 large apple (sliced, optional)
- •1 tablespoon flour or cornstarch (for thickening sauce, optional)

Pat the beef chuck roast dry with paper towels and season generously with salt and pepper on all sides.

Peel and chop the carrots into large chunks, slice the onions, mince the garlic, and slice the apple if using.
