Add raw chicken, vegetables, aromatics, seasoning, and broth to the slow cooker.
Stir gently, cover, and cook on low for 6-8 hours or on high for 4 hours.
Shred the chicken using two forks and return it to the slow cooker.
Whisk cornstarch into the cream or half and half, then stir into the soup.
Add the uncooked gnocchi and baby spinach to the slow cooker.
