Peach cobbler is a delightful dessert that combines juicy, fresh peach slices with a buttery, cake-like topping. Preheat your oven to 350°F and spray a 9×13 baking dish with nonstick spray.
In a medium saucepan, combine the sliced peaches, granulated sugar, brown sugar, and a pinch of salt.
Cook over medium heat for about 3–4 minutes, until the sugar melts and the mixture is warm.
Pour the melted butter into the bottom of the prepared baking dish without stirring.
In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, salt, and milk until smooth.
Pour this mixture into the baking dish over the butter without stirring.
Spoon the peach mixture evenly over the batter, including some juice, and sprinkle with brown sugar and cinnamon.
Bake in the preheated oven for 38–42 minutes until golden and bubbling at the edges.
