This classic cheesecake recipe delivers a silky, rich texture that's loved by dessert enthusiasts around the globe. Perfect for celebrations or as a sweet weeknight treat, it features a buttery graham cracker crust and a creamy filling made with cream cheese and sour cream. Optionally topped with fresh berries or chocolate drizzle, this cheesecake is sure to impress your guests while satisfying your sweet tooth.
Preheat your oven to 325°F (160°C).
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes, then remove and let cool.
In a large mixing bowl, beat the cream cheese until smooth and creamy.
Gradually add sugar and vanilla extract, mixing until well combined.
Add the eggs, one at a time, mixing on low speed after each addition to avoid overmixing.
Fold in the sour cream until just combined.
Pour the filling over the cooled crust in the springform pan.
Bake for 1 hour, or until the center is set but still slightly jiggly.
Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
Remove the cheesecake from the oven and let it cool completely at room temperature.
Cover and refrigerate for at least 4 hours, preferably overnight.
Remove the cheesecake from the springform pan and top with fresh berries, whipped cream, or chocolate drizzle as desired.
