Preheat the oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
Combine crushed chocolate cookies with melted butter until evenly mixed.
Press the mixture firmly into the bottom and slightly up the sides of the prepared pan.
Bake in the preheated oven for 8 to 10 minutes and allow it to cool completely.
In a large bowl, beat together softened cream cheese and granulated sugar until smooth.
Add in ricotta cheese, vanilla extract, and ground cinnamon, mixing until well combined.
Add eggs one at a time, mixing on low speed just until each egg is incorporated.
Gently fold in mini chocolate chips using a spatula.
Pour the filling over the cooled crust and smooth the top with a spatula.
Bake in oven for about 55 to 65 minutes until the edges are set but center jiggles slightly.
Turn off the oven, crack open the door slightly, and let the cheesecake rest inside for 30 minutes.
After resting, remove from oven and allow to cool completely at room temperature.
Refrigerate your cheesecake for at least 6 hours or overnight until fully chilled.
When ready to serve, whip heavy cream with powdered sugar until soft peaks form.
Pipe or spoon the whipped cream around the top of your cheesecake.
Sprinkle chopped chocolate or extra mini chocolate chips on top before serving.
