Ingredients
- •2 teaspoons olive oil
- •1 cup yellow onion (chopped)
- •3 cloves garlic (minced)
- •1 medium red bell pepper (chopped)
- •1 pound extra lean ground turkey (or chicken (99%))
- •4 tablespoons chili powder (use mild; McCormick preferred)
- •2 teaspoons ground cumin
- •1 teaspoon dried oregano
- •0.25 teaspoon cayenne pepper
- •0.5 teaspoon salt (plus more to taste)
- •28 ounces diced tomatoes (or crushed tomatoes)
- •1.25 cups chicken broth
- •2 cans dark red kidney beans (15 oz, rinsed and drained)
- •1 can sweet corn (15 oz, rinsed and drained)

Instructions
