Place a large Dutch oven over medium-high heat and brown the ground beef until cooked through, breaking it into crumbles.
Drain excess grease from the pot.
Lower heat to medium, add diced onion, and sauté for 5-7 minutes until translucent.
Stir in garlic and cook for 60 seconds until fragrant.
Add tomato paste, chili powder, cumin, smoked paprika, oregano, and cayenne pepper, stirring to toast the spices for 1 minute.
