These Chicken Bacon Ranch Rice Bowls combine juicy chicken, crispy bacon, and tender rice with a cool ranch drizzle. Perfect for busy weeknights, this dish offers familiar comfort with a twist, providing a hearty and satisfying blend of protein, carbs, and veggies. Ideal for meal prep or quick dinners, each bowl delivers big flavors and a balanced meal all in one dish.
Add chopped bacon to a large skillet over medium heat. Cook until crisp, 6–8 minutes. Transfer to a paper towel–lined plate.
Leave 1–2 tablespoons bacon fat in the pan.
Season chicken with 1 tablespoon ranch seasoning, a pinch of salt, and pepper. Increase heat to medium-high.
Add chicken to the skillet and cook until browned and cooked through, 6–8 minutes. Remove to a plate.
If the pan seems dry, add a splash of olive oil.
Cook onion and bell pepper with a pinch of salt for 3–4 minutes until softened.
Stir in garlic for 30 seconds, then add broccoli and corn.
Cook 3–4 more minutes until bright and tender-crisp.
Sprinkle in the remaining ranch seasoning. Return the chicken to the pan.
Pour in chicken broth and simmer 1–2 minutes, scraping up browned bits.
Taste and adjust salt and pepper.
In a separate skillet or microwave, heat the cooked rice until hot and fluffy.
If using a skillet, add a tiny bit of oil and break up clumps for better texture.
Add a bed of rice to each bowl.
Top with the chicken and veggie mixture.
Sprinkle cheese over the hot toppings so it melts lightly.
Scatter the crispy bacon on top.
Drizzle with ranch dressing.
Add green onions, avocado, or a squeeze of hot sauce if you like.
Enjoy right away while everything is hot, creamy, and crisp where it should be.
