
Christmas Side Dish Salad

This Christmas Side Dish Salad is a delightful blend of romaine lettuce, baby rocket, and a mix of sweet and savory elements like dried cranberries, candied almonds, and blue cheese. The crunchy apple adds a refreshing touch, while the vibrant flavors create a perfect complement to the main dishes on your holiday table. It’s easy to make, making it a fantastic addition to any festive spread.
Ingredients
- •8 large lettuce leaves (I used Romaine)
- •30 g baby rocket
- •60 g dried cranberries
- •60 g candied almonds
- •30 g blue cheese
- •1 unit apple (cut into cubes)
- •1 tsp Dijon mustard
- •2 tbsp honey
- •1 tsp red wine vinegar
- •1 tsp lemon juice
- •salt (to taste)
- •pepper (to taste)
- •50 ml olive oil
Instructions

Use a whisk to mix the Dijon mustard with honey, red wine vinegar, lemon juice, salt, and pepper.

Drizzle in the olive oil while constantly whisking to emulsify the ingredients.

Reserve a bit of the ingredients that aren't leaves.

Mix the lettuce with the rocket and the rest of the ingredients (except the reserved ones) as well as with half the dressing.
