Salisbury steak meatballs are a fun twist on a classic comfort dish that combines ground beef and pork into savory bite-size morsels. They're paired with creamy garlic herb mashed potatoes, creating a satisfying and hearty meal perfect for weeknights or family gatherings. The meatballs are rich in flavor thanks to Worcestershire sauce, thyme, and oregano, while the mashed potatoes are elevated by roasted garlic and fresh herbs, providing a delightful contrast. Enjoy this nostalgic dish that brings comfort and flavor to your dinner table.
In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, thyme, oregano, and a generous pinch of salt and pepper.
Mix gently with your hands until just combined; over-mixing can make the meatballs tough.
Form the mixture into 1-inch meatballs (about 24-30 total).
Heat a large skillet over medium-high heat, add a drizzle of oil, and brown the meatballs on all sides, working in batches if necessary.
Transfer the browned meatballs to a plate and set aside.
Reduce the heat to medium and melt 2 tbsp butter in the same skillet.
Whisk in the flour and cook for 1-2 minutes to create a roux.
Slowly pour in the beef broth while whisking continuously, then stir in tomato paste, soy sauce, and black pepper.
Bring the gravy to a gentle simmer.
Return the meatballs to the skillet, nestling them into the gravy.
Cover and let simmer for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened.
Adjust seasoning with additional salt or pepper if needed.
While the meatballs simmer, place the cubed potatoes in a large pot and cover with cold water.
Add a pinch of salt and bring to a boil.
Cook until the potatoes are fork-tender, about 12-15 minutes.
Drain well.
Return the potatoes to the pot, add butter, milk, and minced garlic.
Mash until smooth and creamy.
Fold in the fresh parsley, chives, and season with salt and pepper to taste.
Serve the Salisbury steak meatballs hot, spooned over a generous mound of garlic-herb mashed potatoes.
Garnish with a sprinkle of extra chopped herbs if desired, and enjoy the comforting blend of flavors.
