This overnight slow cooker breakfast casserole is the perfect solution for busy holiday mornings. With layers of crispy frozen shredded potatoes, savory breakfast sausage, and melted colby jack cheese, it creates a comforting and hearty dish. Simply prepare it the night before, and wake up to a delicious breakfast ready to be served with minimal clean up.
Brown the ground breakfast sausage.
Layer ½ the bag of potatoes on the bottom of the slow cooker.
Cover the potatoes in shredded cheese.
Layer ½ the ground sausage atop the cheese and potatoes.
Do another layer of potatoes, sausage and cheese.
Season with garlic salt.
Beat the eggs and milk together and pour over the mixture.
Cook on low for 8 hours and enjoy a wonderful morning meal!
