These no-bake cheesecake bites are a perfect summer dessert, offering a rich, creamy filling nestled in a crunchy crust. Ideal for gatherings, potlucks, or a sweet treat after dinner, they require no baking and come together quickly. With their bite-sized portions, they're a crowd-pleaser across all ages, making them a favorite for both kids and adults. Customize them with toppings like fruit preserves or chocolate drizzle for an extra flair.
In a medium bowl, combine the graham cracker crumbs, sugar, and salt. Stir in the melted butter until the mixture looks like wet sand.
Press about 1 tablespoon of the crust mixture firmly into each cup of a mini muffin tin. Freeze for 10 minutes.
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy.
Add the powdered sugar and vanilla extract to the cream cheese mixture and beat until fully combined.
In a separate chilled bowl, whip the heavy cream until stiff peaks form.
Fold one-third of the whipped cream into the cream cheese mixture, then gently fold in the remaining whipped cream until no white streaks remain.
Scoop the filling into a piping bag or zip-top bag and fill each muffin cup almost to the top.
Cover the muffin tin with plastic wrap and refrigerate for at least 4 hours or overnight.
Once chilled, gently run a knife around the edges to remove the bites, then add your desired toppings.
