These Garlic Parmesan Roasted Sweet Potatoes provide an alternative side dish recipe and tips for cooking sweet vegetables with savory ingredients. These sweet potatoes feature soft insides and crunchy outsides coated with melted parmesan cheese and garlic for extra flavor. Served as a side dish with dinner, these sweet potatoes are striking and memorable. They may be more popular than the main dish.

Ingredients
- •2 lbs sweet potatoes (peeled and cut into uniform 1-inch cubes)
- •2 tbsp extra virgin olive oil ((30ml))
- •1 tsp kosher salt ((5g))
- •½ tsp black pepper ((1g), freshly cracked)
- •3 cloves garlic (minced)
- •½ cup parmesan cheese (freshly grated (45g))
- •2 tbsp fresh parsley (finely chopped (8g))
Instructions
- 1
Preheat your oven to 400°F (200°C). Place your baking pan in the oven to preheat.
- 2
Peel the sweet potatoes and cut them into uniform 1-inch (2.5cm) chunks, placing them into a large mixing bowl.
- 3
Drizzle the sweet potato cubes with the olive oil, kosher salt, and black pepper. Toss vigorously until every cube is lightly and evenly coated.
- 4
Carefully remove the hot baking pan from the oven, line it with parchment paper, and spread the sweet potatoes into a single, even layer without overcrowding.
- 5
Roast for 20 to 25 minutes until the edges touching the pan begin to turn a dark golden-brown.
- 6
Remove the pan from the oven. Evenly scatter the minced garlic and freshly grated parmesan cheese over the partially roasted potatoes.
- 7
Return the pan to the oven for another 8 to 10 minutes. Roast until the cheese is melted, slightly toasted, and crispy, and the garlic is deeply aromatic.
- 8
Remove from the oven and generously garnish with the finely chopped fresh green parsley flakes. Serve immediately while hot and crispy.
