Direct Caramel and Salted Caramel Sauce
Direct caramel is a fundamental technique in pastry that elevates various desserts with its rich, caramel-like flavor. This recipe shows you how to create a smooth direct caramel and transform it into a decadent salted caramel sauce. With the balance of sweetness and saltiness, this sauce pairs beautifully with desserts like cheesecakes or flans. It’s quick to make and useful for topping or incorporating into many sweet dishes.

Let it become a nice pale gold color and don't use any utensil to mix; only move around the sugar by tilting the pan.
- 5
Once golden, add the cream and salt and stir vigorously.
- 6
Be really careful because it's really hot and it will bubble up.
