This crispy bacon onion grilled cheese sandwich transforms a simple meal into something extraordinary. - •1 large onion (thinly sliced)
- •1 pinch salt
- •4 slices thick-cut pork bacon (cooked until crispy)
- •1 cup cheddar cheese (shredded)
- •1 cup Swiss cheese (sliced or shredded)
- •2 tbsp unsalted butter (softened, for spreading)

Slice the onion into thin half-moons.

Heat a skillet over medium heat with olive oil. Add the onions and a pinch of salt.

Cook slowly for about 10-15 minutes, stirring occasionally, until the onions are soft and jammy.
