Fill a large pot with water, salt generously, bring to a boil, add pasta and cook until al dente per package directions.
Reserve about 1/2 cup pasta cooking water, then drain the pasta.
While the pasta cooks, heat a large skillet or Dutch oven over medium-high heat and melt the butter.
Add minced garlic to the melted butter and stir constantly about 1 minute until fragrant but not browned.
Stir in the tomato paste and cook 1 minute, stirring to deepen the flavor.
Pour in the canned tomato sauce and heavy cream, stirring until smooth and evenly combined.
Bring the sauce to a gentle simmer, reduce heat to medium-low, and cook 5 to 7 minutes, stirring occasionally, until slightly thickened.
Taste and season the sauce with the herb seasoning, salt and pepper; add a tiny pinch of sugar if the sauce tastes too acidic.
Add the drained pasta to the skillet and toss to coat, adding reserved pasta water a tablespoon at a time if the sauce is too thick.
Plate the pasta and finish with freshly grated Parmesan cheese.
