Vegan Lemon Cheesecake is a refreshing twist on a classic dessert, featuring a creamy filling made from vegan cream cheese and zesty lemon juice. With just 20 minutes of prep and a light, airy texture, this dessert is perfect for impressing guests or enjoying on a warm evening. It’s freezer-friendly, allowing you to prepare it ahead of time and have a delightful treat ready whenever cravings strike. Top it with lemon curd for an extra burst of citrus flavor and enjoy a guilt-free indulgence that everyone will love.
Preheat your oven to 350°F (175°C) if you prefer a warm crust.
In a mixing bowl, combine crushed cookies and melted coconut oil until the mixture resembles wet sand.
Press this blend into the bottom of a loaf pan firmly, ensuring an even layer.
Bake for 10 minutes, watching for a light golden hue, then let it cool.
In a large mixing bowl, add the vegan cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest.
Using an electric mixer, beat on medium speed for about 2-3 minutes until creamy and smooth.
Once your crust has cooled, pour the creamy filling over the crust in the loaf pan, smoothing it out.
Tap the pan gently on the counter to eliminate any air bubbles.
Spread a layer of lemon curd over the top of the cream cheese layer if desired.
Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight.
Once chilled and set, carefully remove the cheesecake from the loaf pan and slice into portions.
Serve chilled, garnished with extra lemon zest or fresh berries.
