Banana Oat Protein Pancakes offer a comforting start to your day with their soft texture and natural sweetness from ripe bananas. Ideal for weekend breakfasts or quick weekday meals, these pancakes blend oats, eggs, and Greek yogurt for a nutritious twist on a classic dish. They are freezer-friendly, making it easy to enjoy a wholesome breakfast throughout the week. Top them with fresh fruit or a drizzle of maple syrup for an extra treat.
Add the banana, oats, eggs, Greek yogurt, baking powder, vanilla, cinnamon, and salt to a blender.
Blend for about 45–60 seconds until the batter is completely smooth.
Let the batter rest for 5 minutes to absorb moisture.
Heat a non-stick skillet over medium-low heat and lightly grease it.
Scoop about ¼ cup of batter for each pancake.
Cook for 2–3 minutes until bubbles form and edges look set.
Carefully flip and cook another 2 minutes until golden and cooked through.
Repeat with remaining batter.
