Taco soup brings the beloved taste of tacos into a comforting bowl, perfect for chilly evenings or casual family dinners. This dish combines seasoned ground beef, beans, zesty tomatoes, and a medley of spices for a satisfying experience. With a silky consistency, each spoonful resonates with the warmth of Mexican flavors, making it a versatile meal that can be customized with various toppings. Enjoy it on its own or paired with cornbread for a complete meal.
In a large soup pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled.
Add the chopped onions, bell peppers, and minced garlic to the pot and sauté until softened, about 5 minutes.
Stir in the diced tomatoes, drained and rinsed kidney beans, and corn kernels.
Sprinkle the taco seasoning mix over the ingredients and stir to combine.
Bring the soup to a simmer over medium-low heat and let it simmer uncovered for about 20-25 minutes.
Taste the soup and adjust seasoning if necessary.
Ladle the hot taco soup into bowls and serve with optional toppings such as shredded cheese and sour cream.
