Stuffed Tofu Puffs with Chives are a beloved dish originating from western Guangdong, showcasing a wonderful blend of soft, deep-fried tofu puffs filled with a savory mixture of minced pork, chives, and dried shrimp. This dish is perfect for serving as a main course during family gatherings or special occasions, bringing a rustic charm that resonates with tradition. Finely chop or mince the pork belly, and cut the chives into 1cm pieces.
Heat 5ml of peanut oil in a pan, stir-fry the dried shrimp for 2 minutes until fragrant.
Prepare the filling by combining the minced pork belly, chives, and fried shrimp in a bowl.
Add 30ml of peanut oil, 6g of salt, and 12ml of soy sauce, mixing well.
Create a small opening in each tofu puff and stuff it with the prepared filling.
Slice the pork belly into thin pieces, lay them at the bottom of a clay pot, add 5ml of peanut oil, and place the stuffed tofu puffs on top.
Pour 350ml of chicken broth into the pot, bring to a boil, then simmer for 20 minutes until only a little broth remains.
