Start by trimming any excess fat from the pork tenderloin.
Cut the tenderloin into 1-inch thick medallions.
In a bowl, combine garlic powder, onion powder, paprika, salt, pepper, and rosemary.
Rub the seasoning blend into each medallion generously.
In a large skillet, heat olive oil over medium-high heat until shimmering.
Add the pork medallions to the skillet, ensuring they do not overlap.
Sear for about 3-4 minutes on each side, or until golden brown and cooked through.
Remove them from the skillet and keep warm.
In the same skillet, add chicken broth, Dijon mustard, and honey.
Stir to combine and bring to a simmer, scraping up any bits stuck to the pan.
Once the sauce is simmering, stir in the butter until melted and the sauce thickens slightly.
Return the pork medallions to the skillet and coat them in the sauce, cooking for an additional minute.
Ensure the internal temperature of the pork reads 145°F (62.8°C).
