Grilled Skirt Steak Quesadillas combine juicy marinated skirt steak with ooey-gooey cheese, all wrapped in warm tortillas. With a zesty marinade of olive oil, lime juice, and fresh cilantro, these quesadillas offer rich flavors and comforting textures. Perfect for weeknight dinners or entertaining guests, they can be paired with salsa, sour cream, or guacamole for a complete meal. In a food processor or blender, combine all marinade ingredients and pulse until smooth.
In a large resealable bag, place skirt steak, add marinade, turn several times to coat, and refrigerate for 1 hour.
Preheat grill to medium-high heat.
Remove skirt steak from bag and discard leftover marinade. Brush both sides of sliced onions with olive oil.
Grill steak and onions for 3-5 minutes per side, or until steak is done to taste.
Reduce grill temperature to medium heat and transfer steak and onions to a cutting board to rest for 5 minutes.
Slice steak against the grain into strips and onions into strips.
Lay tortillas out, split shredded cheese, sliced onions, and steak evenly between tortillas, and fold each tortilla in half.
Grill quesadillas for 2-3 minutes per side, until cheese is melted.
Cut quesadillas into wedges and serve with salsa, sour cream, and guacamole.
