This soft sourdough sandwich bread delivers a fluffy texture that's perfect for everything from breakfast toast to hearty sandwiches. Feed the starter by adding 2 cups of flour and 1 ⅓ cups of warm water to no more than ½ cup of starter.
Allow the fed starter to become active at room temperature.
In a stand mixer, combine 2 cups of warm liquid, 2 cups of active sourdough starter, and 3 cups of flour.
Mix on low speed for a minute, then cover and let ferment overnight.
The next morning, add your fat, sweetener, salt, and milk.
Mix until partially combined, then add 9-11 cups of flour until the dough pulls away from the bowl.
Mix on medium speed for 8 to 10 minutes to develop gluten.
Transfer the dough to a large oiled bowl, cover, and let rise for 2-3 hours until nearly doubled in size.
Once risen, punch down the dough and shape it into loaves.
Allow the shaped loaves to rise again until they surpass the edges of the pans.
Preheat the oven to 375 degrees.
Slash the tops of the loaves and bake for 30 minutes or until the internal temperature reaches 190 degrees.
Cool on a rack and brush with butter to maintain softness.
