Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a large bowl, combine ground chicken, eggs, minced garlic, olive oil, panko crumbs, Parmesan cheese, onion powder, salt, pepper, and paprika.
Gently mix the meatball ingredients together and use a scooper to form meatballs onto the tray.
Bake for 18 minutes until lightly browned and no longer pink inside.
Set the cooked meatballs aside while preparing the sauce.
In a deep oven-proof skillet, melt butter over medium heat.
Add minced garlic, Italian seasoning, red pepper flakes, and sundried tomatoes; cook for 2 minutes.
Add white wine and cook for 2-3 minutes until mostly reduced.
Incorporate chicken broth, then gradually whisk in heavy cream and Parmesan cheese until combined.
Cook the sauce until it thickens slightly, stirring occasionally.
Add the meatballs to the sauce and stir until they are well coated.
Transfer the skillet to the oven and bake for about 10 minutes until heated through and bubbly.
Serve immediately.
