For a quick meal for two, hot honey beef bowls contain taco-seasoned beef, sweet potato pieces, tenderstem broccoli, avocado, and cottage cheese. Hot honey provides sweet and spicy flavor contrasts with other creamy ingredients and toppings in hot honey beef bowls. Hot honey beef bowls offer variety in texture and fillingness.

Lean ground beef is cooked in taco-seasoning ingredients to make a caramelized beef flavor. Sweet potatoes are seasoned with oil, salt, and smoked paprika and baked or air-fried. Full-fat cottage cheese and avocado are included for creaminess and to balance the spiciness of the beef. Tenderstem broccoli is included as a green vegetable. Steaming or air frying at the end of cooking helps retain broccoli texture.

The sweet potatoes are fully cooked when they are crispy, not just tender, halfway through cooking and after flipping. Spread in a single layer to encourage browning. Overfilling your sweet potato basket or pan is likely the biggest contributor to limp, uncrisped sweet potatoes. Stir and separate ground beef with a spatula as it cooks to check for browned and caramelized spots before serving.

Serve bowls of the recipe warm with hot honey drizzled over the top. Prepare lunches in advance with cooked beef and sweet potatoes stored separately, and add cottage cheese and fresh slices of avocado at serving time. The recipe says the finished bowl can be served cold, and fresh avocado slices should be added just before serving to prevent discoloration.

Why we keep this one around
- It is a one-dish meal for two people. Ingredients consist of beef, sweet potatoes, broccoli, cottage cheese, and cold and hot avocado.
- Sweet heat is served along with the other ingredients by adding hot honey. This pairs well with the spicy taco meat and cold cottage cheese and avocado.
- Family members can serve each portion of food as desired when served because individual ingredients are served separately, and the amount of hot honey served can range from one to two tablespoons.
- Busy lunch prep is a benefit of this recipe, you can prepare the beef mince and sweet potato chunks in advance and store them separately for easy assembly with fresh toppings later.
- Picky eaters can avoid some ingredients because the broccoli, avocado, cottage cheese, and hot honey are added only when each individual bowl is constructed.
- Leftovers can be prepared and served in various ways, as described in the article, such as reheating leftovers for serving or serving cold with new servings of avocado and cottage cheese.
