Crack chicken sandwiches start with tender cooked chicken, shredded so it holds onto the warm sauce, and I fold it back in with bacon at the end after melting the cream cheese over low heat for a thick filling on toasted brioche buns (I like the bacon left in little salty bits).
For the stovetop version, I use a large skillet and cook the breasts over medium-high heat until golden and cooked through. The chicken comes out to shred with two forks, then I turn the skillet to low and stir the sauce smooth before it goes back in, keeping at it until every strand is coated and the pan is hot again.
Full-fat block cream cheese is what I buy, and I soften it first so it melts without lumps. Then freshly shredded sharp cheddar goes into the smooth base. I cook the bacon until crispy, crumble it, and stir it through at the end, where it stays in distinct salty bits.
The slow cooker and Instant Pot finish the same way, with shredded chicken stirred back into the melted filling, and for the pressure cooker I drain excess liquid before the cream cheese goes in or the mixture will be thinner. I use Keep Warm after the chicken is shredded. It stays warm while you stir.
