- •2 tbsp oil from the sun-dried tomato jar
- •4 cloves fresh garlic (minced)
- •1 tbsp double-concentrated tomato paste
- •0.33 cup sun-dried tomatoes (in oil, drained and chopped)
- •0.75 cup low-sodium chicken stock
- •1 cup heavy cream (minimum 36% fat)
- •0.5 cup freshly grated Parmesan (from a block)
- •0.25 cup fresh basil leaves (torn)

Pat the chicken completely dry and season both sides with salt, pepper, garlic powder, and Italian seasoning.

Set the Instant Pot to Sauté on high. Add sun-dried tomato oil and heat until shimmering.

Sear chicken no more than two breasts at a time for 3 minutes per side, then remove to a plate.
